So I could easily start this blog post out by talking about how this pregnancy is making me crave all things sweet and how I needed to find a healthier alternative….but….. if we’re being totally REAL I crave sweets all the time, pregnant or not 🤦♀️ This is why I love these energy bites. They truly do cut cravings, and they’re good for you. This recipe can also be customized to add in ingredients that work best for your family. Let’s jump in!
The base of this recipe are very simple ingredients, most you can probably find in your pantry on any given day, oats, peanut butter, honey, mini chocolate chips, vanilla extract and ground flax seed. Many of the ingredients are loaded with fiber and protein, so totally healthy while still giving you that sweetness.
To make the bites you simply add all of the ingredients into a bowl and combine. So easy a toddler can do it! 😊
I used coconut flakes in this batch, but this is the part where you can have fun and add in any ingredients that you like. Instead of the coconut you could do dried fruit, nuts, or chia seeds. If you’re feeling really crazy you could even use m&m’s in place of the chocolate chips, or use dark chocolate -if that’s what you’re into!
Be on the look out for your little “helper” trying to sneak in bites!
Lastly, you will roll them into little balls and refrigerate them for about a half hour so. This lets them harden up a bit so they don’t fall apart easily. It helps to dampen your hands a bit with water before rolling them, if you find that they aren’t sticking together well enough try adding more honey or peanut butter. Finally store them in an air tight baggy or container. They could also be frozen if you don’t think you’ll finish them in a week but let’s be real, they won’t last that long!
Energy Bites Recipe:
1 Cup Oatmeal
1/2 Cup Chocolate Chips
1/3 Cup Honey
1/2 Cup Peanut Butter
1/2 Ground Flaxseed
1 tsp Vanilla Extract
